My favorite mac and cheese

Today I made my favorite mac and cheese recipe. It is featuted in Eat Like a Gilmore: the Unoffical Cookbook for Fans of Gilmore Girls by Kristi Carlson. It is one of the first recipes I made after getting the cookbook for a Christmas present. Ive been making it since then - almost ten years now - and know the recipe by heart. It calls for a lot of cheese and almost seems like it would be too much, but when its done, its perfect. I still enjoy trying other mac and cheese recipes but this is the one I always come back to and the one that I compare all other recipes to. Its become part of our Thanksgiving menu every year and has become a quick and easy back up meal when we don't know what else to fix. 

Pierogi Casserole

This was a recipe my boss shared with me. It was super good and really easy to make. It uses a pierogi filling layered with lasagna noodles and topped with mushrooms.

Breakfast Scramble

Today I fixed a breakfast scramble with fried potatoes, stuffed mushrooms and toast. The recipe for the scramble was orginally written as an omlet recipe that I modified into a scramble to simpliy the cooking. It was the recipe for Luke's Special Omelet from Gilmore Girls: The Offical Cookbook  by Kristen Mulrooney. It works well as a scramble and tastes amazing.

Cookbook tradition

Every year for Christmas I get a new cookbook from my mom. It is usually one that I've picked out. Most of the cookbooks I enjoy are inspired by movies, tv shows, books or celebrity chefs. This years cookbook was Good Lookin' Cookin': A Year of Meals by Dolly Parton and Rachel Parton George.  I really enjoy this cookbook as it broken down to include different recipes for each month of the year. The first recipe I made from the book was the cornbread sticks. The batter was a little thicker than I am used to for cornbread. However the thicker batter was nice to spoon into a shaped cast iron pan and they baked really nice.
