Cowboy Coffee Chili

This is a really simple chili to make, that is a family favorite from a Western BBQ cookbook. I use ground beef instead of the pork that the recipe calls for. It is a nice chili to whip up quickly and one that doesnt take a lot of ingredients - although the coffee and enchilada sauce are different for chili. Over it is one my favorites.

Pizza and a Margarita

I did not cook today, but we did an enjoy a Big New Yorker Pizza from Pizza Hut. Pizza Hut orginally came out with the Big New Yorker around 2000. It was discontinued for awhile and was brought back a year or two ago. When it was orginally out, we would get one on Saturday nights and then watch a show that was on tv at the time called The Others . I was so excited when Pizza Hut brought them back as it always reminded of those Saturday nights. The margarita recipe I used today was featured in Eat Like A Gilmore: Daily Cravings. An Unoffical Cookbook for Fans of Gilmore Girls, With 100 New Recipes by Kristi Carlson. The recipe was well written and easy to follow. I did only make half a recipe as the orginal recipe made 3-4 margaritas. I usually do not care for margaritas, but these were pretty good.
