Jerk chicken dinner
Today I made a jerk chicken dinner - jerk chicken, Jamican rice and peas (beans) and fried plantains. We have been making the jerk chicken and the fried plantains for about five years now, but just recently started making the rice and beans with it. The first time we made the chicken was the day after a really severe storm - some places in the area were without power for several days after that storm. The chicken and the rice were recipes that I found online, and are linked below. The plantains are just sliced and fried in a pan with a little bit of oil and then seasoned with salt after. When picking out plaintains from the store, make sure they are soft - the firmer ones can be harder to peel. The riper the plantains, the sweeter they will be - they should look like over ripe bananas.
