Gumbo
Today I made a big pot of gumbo. I have been making this recipe for years, and it is one of my favorites. It is one of the first things I started cooking. It is a simple chicken and sausage gumbo served over rice. It is easy to make, but can be tricky because of the roux - if it burns you have to start over. After that the rest is super easy. It does take awhile to prepare - about two hours. It is worth it though. Gumbo is something that cant be rushed. I usually make a big pot full and freeze the leftovers for a quick meal later on.
