Happy Mememial Day. We our having our cookout meal a day early since I have to work tomorrow. We didn't grill outside, but used our Ninja Foodi Grill...tastes the same but easier. I hope everyone has a great holiday weekend.
Kool Aid pie is a quick and easy pie to make and great for summer. All you need is a graham cracker crust, a packet of Kool Aid (any flavor you want), a can of sweetened condensed milk and a carton of Cool Whip. Mix the Kool Aid and sweetened condensed mill together and then fold in the Cool Whip. Pour into the graham cracker crust and let set before serving. I usually make mine the day before I'm ready to serve it. I normally use orange Kool Aid for mine (it tastes like an orange creamcickle) but today I used the Blue Raspberry Lemonade flavor.
Today I made ribs with a Memphis dry rub. I used the recipe for the Whopper Spareribs from The Castle Rock Kitchen: Wicked Good Recipes From the World of Stephen King. The book gives the recipe for a homade Memphis dry rub that is reallly good and super easy to make. I served the ribs with some mac and cheese (just a box mix today) and made a banana pudding for dessert. The banana pudding is a super simple desert to make, and is perfect for the hotter summer months. All you need is vanilla wafers, bananas, vanilla pudding, and Cool Whip. Layer everything in a cake pan beginning and endng with a layer of vanilla wafers.
This is one of my favorite recipes from The Castle Rock Kitchen. It is easy to make, although there are several different things to make for it. The meal itself is made up of chicken thighs, peas, gravy, and a batch of the potato stuffing that is featured in the book. I usually, don't like stuffing, but I love this one. It has a great flavor and is never dry. I usually serve this meal with a slice of fruit pie for dessert and it adds the perfect finish to it
