Tiramisu

Tiramisu is one of my favorite desserts, and simple to make. The recipe I use is from The Sopranos Family Cookbook compiled by Artie Bucco. I loke this recipe because it is one of thr few tiramisu recipes that does not use eggs. I know that traditionally, tiramisu does use eggs, but I was never comfortable using eggs with mine. 

Cowboy Coffee Chili

This is a really simple chili to make, that is a family favorite from a Western BBQ cookbook. I use ground beef instead of the pork that the recipe calls for. It is a nice chili to whip up quickly and one that doesnt take a lot of ingredients - although the coffee and enchilada sauce are different for chili. Over it is one my favorites. 

Street Taco Dinner

Today, I made street tacos with rice and beans. The recipes for the chicken, rice, and beans came from Trejo's Tacos: Recipes and Stories from L.A. by Danny Trejo and Hugh Garvey. The beans I made was actually the Cheesey Bean Dip, but is good on ita own as well. I made the Spanish rice and the grilled chicken. I served the girlled chicken on corn tortillas with cilantro and onions. I also made the Mojo sauce from The Castle Rock Kitchen by Theresea Carle-Sanders and drizzled it on top of the tacos.

Jerk chicken dinner

Today I made a jerk chicken dinner - jerk chicken, Jamican rice and peas (beans) and fried plantains. We have been making the jerk chicken and the fried plantains for about five years now, but just recently started making the rice and beans with it. The first time we made the chicken was the day after a really severe storm - some places in the area were without power for several days after that storm. The chicken and the rice were recipes that I found online, and are linked below. The plantains are just sliced and fried in a pan with a little bit of oil and then seasoned with salt after. When picking out plaintains from the store, make sure they are soft - the firmer ones can be harder to peel. The riper the plantains, the sweeter they will be - they should look like over ripe bananas.  Jerk Chicke Jamacian Rice and Peas (beans)

Cheese Grits with Ham and Red-eye Gravy

Today I made cheese grits with ham and red-eye gravy from The Wheel of Fortune Collectable Cookbook from thr Mr. Food Test Kitchen. This is one of my go to recipes from this book. Its super easy and pretty quick to make. We usually get a ham steak from the grocery store when we make it, but it is a great recipe to use left over ham if you have some. 

Cheeseburger Soup

Today I made Cheeseburger Soup.  The recipe is available in The Tried & True Cookbook: 150 Quick and Easy Recipes for Busy Families By Alyssa Rivers. It is also available online on the website called The Recipe Critic. I love a lot of the recipes from Alyssa Rivers. The ones I have made (including this soup) have been super easy to make and use common ingrediants that I have easy access to. I do reccomend checking out her website or getting her cookbook. The Cheeseburger soup was very good and would be good on a fall or winter day. Family recipe pasta

This is a pasta sauce recipe that my grandmother used to make all the time. It is simple to make and only uses three ingrediants - tomato sauce, Velveeta cheese, and garlic. I added some chicken to it today to add some protien to the dish. Its a family favorite for us.
